Healthy leftover
Healthy Turkey and Pork Meatloaf

We’ve blown through October and Halloween and are now square in late November.  Thanksgiving this week puts us square in the holiday season.  Do you tend to go overboard during all of the parties or do you mostly eat healthy?

You probably already have some degree of plan for Thanksgiving dinner; where you’re going, who will be there, what you’re eating and drinking.  You might even have plans for a football game or family hang time.

What about plans for all the leftovers?  Do you send them home with your guests or do you end up picking on them for days?

Here is a nice, relatively healthy turkey and ham meatloaf recipe.  You will likely have most or all of the ingredients left over from Thanksgiving.

Healthy Turkey and Pork Meatloaf

Shopping & Ingredients List:

400g lean Ground Pork

400g Ground Turkey

100g Onion, grated

1 Zucchini, grated

2 Garlic Cloves, crushed

1 Egg, beaten

50g dried Breadcrumbs

2 tbsp Tomato Ketchup

1 tsp Cumin

1 tsp dried Coriander

¾ tsp Garlic Powder

½ tsp Cayenne Pepper

2 tsp Dijon Mustard

½ tsp Black Pepper

½ tsp Salt

Olive Oil Spray

1. Preheat oven to 375 degrees. Spray a non-stick loaf pan.

2. Using a paper towel squeeze excess juice from grated zucchini.

3. In a bowl mix together all the ingredients. This is easier using your hands rather than a kitchen implement.

4. Fill the loaf pan with the mix & bake for at least 1 hour. Allow to cool a little before releasing from tin & cutting. Serve 1 chunky slice per person. This recipe makes 6 thick slices.
